Pretty fancy biscuits

Today I have been learning how to pipe. My aunt (of lemon cake fame and who knows her way round a piping nozzle) and cousin came round and, starting with a massive pile of biscuits (twice the recipe given here), we covered them in as much icing as humanly possible.

We iced the biscuits using royal icing, made with two egg whites and enough icing sugar sieved in to make a mixture stiff enough for piping lines and dots.

We also used some fondant, rolled out and cut using the same cutters as the biscuit.

I did these dots. Aren’t they neat?

    I could see you getting a steadier hand! Have you tried more formal icing where you create the shapes on parchment and then transfer them? Maybe this would loose the spontaneity and fun element?

    I am trying to create an afternoon tea. Obviously I need tiny sandwiches and scones – have you some interesting cake or pastry suggestions?

      I’m just about to put some meringues on here, meringue baskets would be good filled with whipped cream and fruit, or dipped in chocolate for little sweets. Madeleines would be nice too. Macaroons, though I’m quite scared of making them! Can’t go wrong with a good Victoria sponge as well, you could cut plain cupcakes in half and sandwich them with jam to make mini ones.

        Thanks – To really pick your brains …..we need sweet and savoury but have to produce the food in a kitchen which has a very busy lunch period. Our scones are really good so there are definite skills. I should perhaps add that the cafe is situated within a charity community building! Any ideas now or in the future are really welcome!
